I love mason jars and finding ways to fill them with healthy and tasty recipes. I did some experimenting and I created a salad I absolutely love. It’s beautiful, colourful, and more importantly jam packed with nutrients.

Ingredients:
3/4 cup kidney beans, canned and rinsed
3/4 cup cooked quinoa (I like to cook mine in broth)
1/2 cooked sweet potato, diced (tip: to save time I pierce the potato with a fork all over and cook for 8-10 minutes in the microwave)
1/4 cup red onion, diced
1/4 cup pumpkin seeds
2 cups spinach
1/3 cup apple, diced (I use pomegranate seeds during the winter months J)

Dressing:
1 and ½ tbsp. olive oil
3 tbsp. apple cider vinegar
salt and black pepper to taste
1 garlic clove, minced

Directions:
Mix all dressing ingredients together and let sit.
Layer ingredients in the mason jar. Starting with kidney beans, quinoa, then add the dressing, red onion, sweet potato, pumpkin seeds, apple, then spinach.
Refrigerate and enjoy the same day or up to 2 days afterwards – it even keeps well once all the ingredients are mixed!
Empty contents into a bowl and enjoy!
